Sweet Floret Clusters (Theepi Poola rekulu)

Try this.......its simple, tasty and very easy to prepare..........

INGREDIENTS:
  • Maida : 1 cup
  • Ghee : 4 - 5 tea spoons
  • Salt : A pinch
  • Sugar : 2 cups
  • Water : 1 cup
  • Oil : For frying
PROCEDURE:

Preparation of Sugar Syrup (Chakkera paakam):

To 2 cups of sugar add 1 cup of water and boil it until string like sugar syrup (as we make for Gulab jamun) is formed.

Making of Floret clusters:

  • Prepare dough by mixing maida, ghee and salt using water (like chapathi dough).
  • From the dough, make small balls and spread each ball into a round thin layer.

  • Make vertical cuts in the centre of the round layer (cut should not touch edges) as shown below:
  • Now roll the layer horizontally as shown below...........

.................and finally press both the edges as shown below, so that the cluster florets are held in position with out separating while frying in oil.

  • Make all the clusters ready in the same manner.

  • Now put a frying pan, pour oil and heat it. Fry the prepared clusters in oil until they turn brown, and then put in sugar syrup.
  • Immediately take them out of sugar syrup (Note : To get crispy layers, do not allow them to soak in sugar syrup).

That's all..............Ur Crispy sweet floret clusters are ready!!!!!!! U can even store them for 4 to 5 days in air tight containers (Note : Exposure to air will make them soft)
