- Maida : 200 gm
- Ghee : 40 - 50 gm
- Fresh curd : 7 - 8 tea spoons
- Baking soda : one pinch (Note : More amount of soda leads to separation of badhusha into pieces while frying in oil and very less amount of soda makes badhushas harder. So exact amount should be taken).
- Oil : For frying
- Sugar : 2 cups
- Water : 1 cup
PROCEDURE :
PREPARATION OF SUGAR SYRUP (Chakkera paakam):
- For 2 cups of sugar add 1 cup of water and allow it to boil until string like sugar syrup (Theega paakam) is formed (same like Gulab jamun syrup) and put off the flame.
MAKING OF BADHUSHAS:
- Mix all the above ingredients together (if necessary add little water) to get a soft dough (like Gulab jamun dough)
- Cover the dough with a clean wet cloth and leave it for 1 to 2 hours. (Note: Do not soak the dough for more than 2 hours as it leads to fermentation of curd present in dough and gives sour taste to badhushas)
- Now make small balls out of dough, roll in between both palms and give it the shape of badhusha as shown below:
- Pour oil in a frying pan and heat it well. Then SWITCH OFF the stove and let the oil become luke warm.
- Now put the above prepared badhushas in oil and leave them as such for 5 minutes.
- After 5 minutes, SWITCH ON the stove, fry bahushas for 2 minutes in sim mode, then fry on medium flame until they get golden brown colour and put in the previously prepared sugar syrup.
